To get started sharpening, you simply place your knife on a table or counter top with the cutting edge up. Hold the knife handle securely with one hand. Then let the "V" notch on the sharpener straddle the blade, and use your thumb to apply light pressure as you draw the AccuSharp down past the point of the blade. When you first use the AccuSharp on a blade, several passes may be required to make sure that your knife's cutting angle conforms to the AccuSharp angle. But once that angle is achieved the first time, it should take just two or three brief passes to put a sharp edge back on your knife--which means that sharpening fits into your busy schedule instead of interfering with it. Having spent hundreds of dollars over the years on various electric sharpeners that were a pain to use and in my unskilled hands produced dubious results, I was intrigued by this very inexpensive simple looking device on Amazon. But for the reviews, I would have assumed that it could not work.
Was I ever wrong. It is great. A few simple strokes, and dull useless knives suddenly slice through things perfectly. Even roll sausage that always came out a squashed mess now slices into lovely round disks. I am in the process of giving one to everyone I know. It is wonderful when something actually works. A delight.

Summary : Great tool in the kitchen
After toting my cooking knives around in my car to drop off at the sharpening shop, never seeming to catch them open, I decided to try again at home. I chose the AccuSharp 001 and was very happy with it to say the least. Within minutes I was slicing and dicing again with "new" knives. Very happy. Would recommend them hands down.
